Ingredients
- Egg — 4
- Egg white — 200g
- Salt — 1 tsp
- Pepper — to season
- Chives — to season
- Bacon — 120g, short-cut
- Sausage — 4, extra lean beef
- Mexican seasoning — 1 tsp (taco)
- Hash brown — 4, frozen
- Tortilla — 4 large
- Low-fat cheese — 35g per wrap, grated

Whisk the eggs and egg whites with salt, pepper and chives, bake in a sprayed dish and cut into 4 squares.

Cook the bacon until crisp and the sausages (split the skins and cook the meat) with taco seasoning.

Cook the hash browns until crisp.

Lay a tortilla flat and layer egg, beef, cheese, bacon and a hash brown in the centre.

Fold the edges of the tortilla up into a sealed parcel and press fold-side down in a sprayed pan over medium heat until golden, then crisp the other side.
