Ingredients

  • English muffins — 6, split and halved to create 24 slices
  • Light margarine — 20g
  • Garlic — 1 clove, finely diced
  • Rosemary — 2g fresh leaves (optional)
  • Parsley — 2g dried flakes
  • Garlic salt — 1 tsp
  • Mozzarella — 60g light, shredded

Directions

  1. 1

Split each muffin in half, then cut both halves in half again — you'll end up with 24 slices from 6 muffins.

  2. 2

    Preheat your oven to 200°C.

  3. 3

In a small bowl, mix together the margarine, diced garlic, rosemary, parsley flakes and garlic salt.

  4. 4

Spread the garlic butter evenly across all 24 slices.

  5. 5

Place 10g of mozzarella on 12 of the slices, then sandwich the remaining 12 slices on top to make 12 mini garlic bread sandwiches.

  6. 6

Line a baking dish with foil, stand the muffin sandwiches upright in a single tight row so they support each other, and bake at 180°C for 10–15 minutes until the cheese has melted and the edges are golden.
