Ingredients
- English muffins — 6, split and halved to create 24 slices
- Light margarine — 20g
- Garlic — 1 clove, finely diced
- Rosemary — 2g fresh leaves (optional)
- Parsley — 2g dried flakes
- Garlic salt — 1 tsp
- Mozzarella — 60g light, shredded

Split each muffin in half, then cut both halves in half again — you'll end up with 24 slices from 6 muffins.

Preheat your oven to 200°C.

In a small bowl, mix together the margarine, diced garlic, rosemary, parsley flakes and garlic salt.

Spread the garlic butter evenly across all 24 slices.

Place 10g of mozzarella on 12 of the slices, then sandwich the remaining 12 slices on top to make 12 mini garlic bread sandwiches.

Line a baking dish with foil, stand the muffin sandwiches upright in a single tight row so they support each other, and bake at 180°C for 10–15 minutes until the cheese has melted and the edges are golden.
